Gin Gin Mule

In 2005, New York’s Pegu Club opened it’s doors and quickly became one of the most important bars in the modern cocktail renaissance. Owned and operated by the inimitable Audrey Saunders, one of the many instant classics she gave us was the Gin-Gin Mule. The ginger pairs perfectly with a London Dry Gin, and using a gin with an abundance of juniper such as Fords lets this drink live up to it’s name.

Instructions

Muddle the mint leaves with lime juice and simple syrup in the tin.
Add Fords Gin and fill with ice.
Shake gently and fine-strain into a highball glass filled with fresh ice.
Top with ginger beer
Garnish with a sprig of mint
